چکیده

In France more than 25 million pigs were slaughtered in 2007. Most of the pigs are a three-breed cross with Pietrain boars or synthetic sire lines mated to crossbred sows (mainly Large White cross Landrace). The classification of pig carcases is based on one or two fat depth and one muscle depth measurements to estimate the total lean meat percentage of the four main cuts. More than 90% of carcases are classified with the manual probe CGM (Meagre Grease Captor – reflectance measurements). In comparison, approximately 5 million pigs are slaughtered each year in Australia. The Australian payment system is based on carcase weight and P2 fat depth.

Genetic Correlations between Carcase Length, Fat and Muscle Depths and Primal Cut Weights in the French Large White Sire Line

Records for the French national Large White sire line were collected between 1999 and 2008 for 65,082 pigs on farm and for 2,429 carcases of siblings measured in three test stations. Ultrasonic measures of backfat and muscle depth were recorded in vivo on farm. In addition, fat and muscle depth as well as length were recorded on carcases of littermates. Weights of primal cuts included back leg,...

The Yield of Lamb Carcases Prepared as “trim” and Traditional Cuts

Carcase data were obtained for 172 lambs representing 2 sexes (86 ewes, 86 wethers) and covering a wide range of carcase weight (16.0-25.6 kg) and fatness (6.0-23.0 mm at the GR site which is defined as over the 12th rib 110 mm from the midline). Of the carcases 87 were prepared into the full range of “Trim” lamb cuts which are boneless and fat denuded. The remaining 85 carcases were prepared i...

Estimation of Carcase Composition of Beef Bulls

The regression of muscle:bone ratio on carcase weight was 0.0055 k 0.0017 kg. The mean muscle: bone ratio adjusted to a carcase weight of 213 kg was 3.99 * 0.20. There was little variation in muscle:bone ratio among individuals and the differences between sire progeny groups were not significant. However, the number of progeny within each group was small and a wider sampling is required to esta...

Relationships between chemical composition of meat from carcass cuts and the whole carcass in Iranian fattailed sheep as affected by breed and feeding level

To investigate the relationship between chemical composition of meat from the carcass cuts and thewhole carcass, 48 nine-month-old randomly selected ram lambs of Ghezel and Mehraban (24 rams per breed)were used in a trial arranged as a 2 × 2 factorial experiment with two breeds and two feeding levels (high andlow), in a completely randomized design. After 80 days, all animals were slaughtered a...
